Brewing Fermentation Tank
Product Technical Specification
Model: BRW Series
1. Product Overview
A Brewing Fermentation Tank is the core equipment in beer, wine, and other alcoholic beverage production, providing suitable fermentation conditions for yeast to convert sugars into ethanol and CO₂. Requires precise control of fermentation temperature, pressure, and time for unique flavor and stable quality. Modern brewing fermenters use stainless steel with jacket temperature control, CIP cleaning, pressure control, and level monitoring.
Key Features
- SUS304/316L stainless steel, food-grade sanitary design
- Jacket temperature control ±0.3°C
- Conical bottom for yeast collection
- CIP online cleaning
- Pressure control for pressurized fermentation
- Dry/wet hopping system (beer)
- Automated control with recipe management
2. Working Principle
Beer Fermentation
Cooled wort inoculated with yeast. Yeast converts fermentable sugars (maltose, glucose, fructose) to ethanol and CO₂. Primary fermentation (5–10 days) at 8–22°C. Secondary (lagering) at 0–4°C for 1–4 weeks. Conical bottom for yeast settling.
Wine Fermentation
Grape must inoculated with wine yeast at 15–30°C. Red wine: with skins; White wine: clarified juice. Temperature control preserves fruit aromas. Optional malolactic fermentation.
Pressurized Fermentation
Sealed tank retains CO₂ for natural carbonation. Shorter cycle, improved foam. Safety valve and pressure gauge at top.
